Hop On / Hop Off

My workout this morning was much, much harder than I expected it to be…oh my goodness. I knew I wanted to workout this morning, but I was a teensy-bit hungover from last night’s festivitiesso I made a deal with myself…Workout, but it doesn’t have to be too tough, just move a little bit. So I figured an easy, slow run or a circuit for 30 minutes. I picked Courtney’s Hop On/Hop Off workout…I’m telling you that this is one of the hardest cardio circuits I’ve done. I’m so glad I completed it even thought I didn’t expect myself to work so hard..it’s a doozy.

Summer Beats

 

Oh Hai! How’s everyone?

Yesterday’s workout was a nice 40 minute run, then off to work! I was in Memphis last week for work, I’ll be sure to catch all of you up on the shortly. I got back home to Nashville Saturday evening and J got back in from the road on Sunday evening. We hung out, ate some Mexican food, and caught each other up on our weekend.

This was his view for the weekend.

 

Last night, after work, I went to see Justin play at The Billboard & Pepsi Summer Beats Concert Event. The line-up included: Gloriana, Jana Kramer, Easton Corbin, Jerrod Niemann and Randy Houser. It was lots of fun.

Urban Grub – Fish Pit and Southern Cantina

The other evening, I tried a new place in the 12th South area of Nashville…Urban GrubIt did not disappoint, all the food was delicious, and I can’t wait to go back and try so many more dishes!

We started out with a round of beers.

First, we tried an appetizer

Spicy Grilled Shrimp & Biscuit

 

pineapple pot de crème & peach bourbon butter

It was so good! Could of have a few more pieces of shrimp, maybe 6 total.

For entrees, we ordered the

House Smoked Brisket Enchiladas

 

poblano/caramelized onion/tomatillo salsa/red sauce Served with rice & beans

And

Southern Steak Frites

 

chimichuri/fresh cut crinkle fries

salad kick

Workout: 43 minute run on the treadmill while watching Dateline

I’ve been on a salad-kick lately. Probably because produce is less expensive right now, I can make salads in advance and grab them whenever I need a quick lunch, and they’re are so many options!

A watermelon, arugula, and feta salad.

 

 

Chop Chop Salad

arugula, romain, feta, avocado, tomato, shrimp, roasted red pepper, roasted zucchini 

Eggplant Stack salad…eggplant, goat cheese, roasted red onion, white beans, roasted red pepper sauce.

Circuit and a Salad

Workout: I started my morning off with a few circuits

One Round of the Jumping Jacks Circuit

This one is tough! I have quite a few circuits via Julie at Peanut Butter Fingers, she’s got some good ideas to make ya sweat.

Two Rounds of the following circuit:

10 burpees

15 pushups

20 mountain climbers

25 bicycle crunches

30 squats

Should take between 40-45 minutes, and you’re good to go for the day. I hope the “after-burn” is still workin’!

For lunch I had something very, very good…

An arugula, feta cheese, and watermelon salad. So good! I bought lots of salad “stuff” at the grocery store yesterday, and plan to make many more to get me through the week.

Heading out for dinner in a few minutes. I’m trying a new place, Urban Grub, so I will fill you in on all the details shortly.
