Pesto Crusted Chicken with Peppers and Onions

3 Chicken Breasts

1 orange pepper

1 onion

olive oil

butter

salt

pepper

1 garlic clove

Pest0, store-bought

This was totally thrown together using what I had in the fridge. Totally random and totally good.

I seasoned the peppers and onions with salt, pepper, and garlic. Cooked them in olive oil and a bit of butter until the get soft/caramelized. MmmmMMmmm.

Take three chicken breasts, season with salt and pepper, Β and coat in store-bought pesto. It’s full of so many flavors…basil, parmesan, salt, pepper, olive oil, pine nuts etc

Make sure the pan is hot and place the chicken in the pan (don’t move them), let it sear the pesto into the chicken, making a crust.

Let the chicken cook, slice and place on top of the orange pepper and onion. Since I’m by myself for a few days, I stored the chicken in a oven proof pan for reheating. This is SO good, and love it when meals come together only “using what you have”. J was jealous after I told him about all of this goodness!
