White Chicken Chili

Tonight’s dinner consisted of homemade white chicken chili. πŸ˜€

Before we get to the goods, I had to pick up some coffee this afternoon. LOVE COFFEE!

White Chicken Chili (Justin’s Recipe)

Into a big soup pot:

1 pound ground white meat chicken

1 tablespoon olive oil or butter

Cook the ground chicken, then set aside.

In the same pot, add the following:

1 medium onion, diced

3 medium anaheim peppers (roasted in the oven then peeled, seeded, and diced)

1 jalapeno, sliced

2 cloves garlic, minced

ground cumin

ground coriander

herb de provence

cayenne pepper, more to taste

chili powder

1 can white beans such as great northern beans, drained and rinsed

4 C chicken broth

chopped fresh cilantro leaves

Salt & Pepper to taste

(I don’t have exact measurements of all the spices, but add them to taste, 1-2tsp.)

Cook for 30min-2 hours and then taste, adjust spices, AND EAT!

Garnish with tortilla chips,more fresh cilantro leaves, sour cream (or greek yogurt would work), and cheese. Enjoy!

The finished product…not too shabby! Tasted amazeballs!
