Mexican kind of Night!

I love Mexican food…ordering it, cooking it. The flavors are just so good (and there are ALWAYS leftovers)! Saturday night, Justin and I broke out the Molcajete (natural volcanic stone, giving it the traditional properties prized for grinding herbs and spices and blending sauces and pastes. A must-have for moles, salsa and fresh guacamole). We wanted to make salsa, chicken tacos and salad…and we did!(prepping the veggies to put into the Molcajete, cooking in a cast-iron skillet)

Salsas are done! We also made a side of mild pico to go with the hot salsa

Into the Molcajete went:

3 garlic gloves,serrano peppers, diced onion, tomatoes, jalapeno peppers, cilantro, chipotles in adobo sauce, salt, pepper and fresh lime juice.

Now, since the chips and salsa portion of our meal was complete, it was time for me to make some margaritas!No mixes here, I make the real thing!

The chicken! 3 shredded chicken breasts, chipotles in adobo, onion, cilantro, garlic, s&p, canned tomatoes, peppers…cook until they get nice and acquainted.Finished product, taco salad with chips and salsa, Justin went for hard tacos with chips and salsa. AND we have lots of leftovers!We were happy, happy, happy!
