Cardio Blast

This morning started out with a 3mi run and a cardio blast circuit that I love. I got the cardio circuit via Julie’s blog, which she got via Jessica’s blog(source)

I only had time for one round before I had to be on a conference call, but this circuit is killer and can kick some serious booty for 2 or 3 rounds. One round usually takes 10-12 minutes.

Moving on, I chomped on some breakfast during my work conference call, which is such a fun way to spend an hour πŸ˜‰

I had 0% greek yogurt with some fresh strawberries. I REALLY miss summer berries, they’re so much more fresh. Who’s with me?

Lunch was Pacific Natural Foods Roasted Red Pepper soup, garnished with sour cream and fresh basil.

I’ve had fresh basil for 3 days in a row, so I decided to see what health benefits basil offers. Check out some nifty info at WHFoods.org. Not too shabby.

I proceeded to eat some pita chips with hummus after I ate my soup.

Do you guys like fresh herbs?

I’m such a huge fan of fresh herbs and with I could have an herb garden. My dad has one and it is usually OVERFLOWING with basil, thyme, oregano, parsley and sage. Good thing he let’s me use all that I want πŸ˜‰

White Chicken Chili

Tonight’s dinner consisted of homemade white chicken chili. πŸ˜€

Before we get to the goods, I had to pick up some coffee this afternoon. LOVE COFFEE!

White Chicken Chili (Justin’s Recipe)

Into a big soup pot:

1 pound ground white meat chicken

1 tablespoon olive oil or butter

Cook the ground chicken, then set aside.

In the same pot, add the following:

1 medium onion, diced

3 medium anaheim peppers (roasted in the oven then peeled, seeded, and diced)

1 jalapeno, sliced

2 cloves garlic, minced

ground cumin

ground coriander

herb de provence

cayenne pepper, more to taste

chili powder

1 can white beans such as great northern beans, drained and rinsed

4 C chicken broth

chopped fresh cilantro leaves

Salt & Pepper to taste

(I don’t have exact measurements of all the spices, but add them to taste, 1-2tsp.)

Cook for 30min-2 hours and then taste, adjust spices, AND EAT!

Garnish with tortilla chips,more fresh cilantro leaves, sour cream (or greek yogurt would work), and cheese. Enjoy!

The finished product…not too shabby! Tasted amazeballs!

Monday = Yoga

This morning I DID NOT want to exercise. I was pouting the entire time I was drinking my coffee because I could not think of a sweat session that sounded appealing.

I managed to run a quick 9-minute mile and do 30 minutes of yoga via 10 Minute Solutions:Yoga . A 40 minute workout is better than nothing, I guess.Β

I was still sore from my workout on Saturday, and I think that was part of the reason for my lack of motivation (if my abs are sore from working out, I feel like it makes me feel bleh and in a funk), but I think yoga was a good choice to help out my muscles.

I found Peanut Butter Cheerios and Dulce de Leche Cheerios, but they were $4.39 at the store! Wha…Wha…Wha??!!! I know some cereal can be expensive, but that’s crazy. Must find coupon.

Dinner is on the way…

Laziest day EVER…

Sunday (yesterday) was the laziest day I’ve had in a long time. No workout, stayed in pj’s, didn’t go outside or cook. But, I did manage to make myself a Caprese Salad. This type of salad is one of my favorites…simple and flavorful.

Slice the tomatoes(I had tomatoes on the vine) and fresh mozzarella, then tear the fresh basil leaves to place on top. Finish with salt, pepper, olive oil and balsamic. SO GOOD!I arranged it very nicely, and ate about half and saved the rest for later…

Side note…I saw this outfit on Pinterest the other day, and need to create it when the weather get warmer. Good thing it’s in the 60s in Nashville!

Just Kicked my own Ass

This morning started with my 3.7 Music Row run.

Followed by 5 rounds of the following 5 exercises…

1) Squat Jumps 5 reps

2) Alternating Lunges 5 reps on each leg, 10 total

3) Push Ups 5 reps

4) Vertical Leg Crunches 10 reps

5) Burpees 10 reps

After I was nice and sweaty I snacked on some cereal while doing some paperwork for work. For lunch, you know I are some chili-leftovers! Even better today.

Heading out tonight to listen to some music at the new National Underground…will let you know how it is!
